Even in a normal time, a good stock will treat you right. In this moment of mass uncertainty and anxiety, I am immeasurably more grateful for this basic building block, a rich, flavorful chicken stock made with leftover roast chicken and aromatics. One of my goals for 2020 is to come up with a vegetable stock that rocks my world. Until that happens, this recipe will keep me warm at night.

Place the bones from 2 roasted or barbecued chickens in a large stockpot. Add 1 onion, halved. Add 2 bay leaves and 2 carrots and 2 celery stalks, roughly chopped. Into the pot pour 6 quarts of cool, filtered water. Over medium heat, bring the pot to a simmer and maintain a simmer for about 1.5-2 hours. Add salt to taste.
